The efficiency of the Australian Army Catering Corps (AACC) has a direct influence on the morale and well-being of the combat soldier. The role of AACC is to plan, prepare, cook, present and serve nutritious meals and to provide technical catering advice.
High standards are essential and members of the Corps take a great deal of pride in the hygienic preparation of nutritious meals and providing a professional and high standard of catering service.
Soldiers of the Corps may be either stewards or cooks, with the opportunity of advancing through the ranks, to positions of responsibility as supervisors. Main job functions at higher ranks include planning and co-ordinating staff, food and beverages for functions, performing bar and financial accounting procedures, and conducting on the job training and workplace assessment.
An Army Steward is a soldier trained to perform food, liquor and beverage service for both a la carte and fine dining and the preparation of light meals. They are also trained to maintain bar, dining room and kitchen equipment, in both barrack and field environments.
Main Job Functions
- Undertake all aspects of food, liquor and beverage service in both barracks and field environments;
- Maintain specialist equipment associated with the serving of food, liquor and beverages in barracks;
- Prepare breakfast, sandwich and light supper meals;
- Carry out stocktaking and reconcile monies with stock used;
- Maintain and operate all field catering equipment; and
- Perform basic cookery and food safety duties in the field.
